Ingredients
  

  • 2 lbs ground beef
  • 1/2 diced yellow onion
  • 2 cloves garlic, minced
  • 28 oz crushed tomatoes
  • 10 oz Rotel tomatoes with green chilies
  • 2 tbsp chili powder
  • 1/4 tsp cayenne pepper
  • 1 tsp ground cumin
  • 1 tsp ground oregano
  • 1 tsp salt
  • 1/4 cup corn meal
  • 15 oz kidney beans drained and rinsed
  • 15 oz black beans drained and rinsed

Toppings options

  • shredded cheese
  • sour cream
  • diced onions white or green onions
  • jalapeno slices
  • tortilla or corn chips
  • crushed crackers

Instructions
 

  • In large pot, cook and crumble ground beef over medium heat until browned.
  • Drain excess grease.
  • Add onion and garlic, cook for 1 minute.
  • Add seasoning to beef and mix in.
  • Add tomatoes and beans, stir to combine.
  • Decrease heat to low and cover.
  • Let simmer for 1 hour, stirring occasionally.
  • When ready to serve, add toppings and enjoy!

Notes

Add water if too dry or thick.
Masa Harina has been suggested instead of corn meal for a great flavor addition. If you have it on hand, I highly recommend it!
Cornstarch (mixed with equal parts water) or flour can also be substituted for cornmeal as a thickener.
