The Best Midwestern Chili

Now that we are getting into fall, there are certain comfort foods that come to mind; breads, apple and pumpkin anything, soups aaaaaaand chili. I love chili. The first cold day, I’m making chili. There are so many types and everyone loves different things. It is one of those great meals that can be made over and over, and never quite make it the same way. No meat, or no beans, or third-degree-burn hot, or no spice at all. Me, I’m a big baby, so while I love the flavor of peppers, I don’t like too much heat.

I have tried so many different recipes and have combined them to find the perfect balance for my family. I make a mildly spiced chili that my kids and I can handle, and then my husband adds extra spice to his bowl.

Once I have gathered all my ingredients, I brown the ground beef in a large pot over medium heat. Once it is cooked, I drain the excess grease then add the onions and garlic. I saute them for 1 minute, just long enough to soften the onions and release the flavors from the garlic. Then I stir the spices into the ground beef.

Add tomatoes and beans and stir. The Rotel adds just a little kick without causing my kids to revolt. Finally, add cornmeal to thicken. If you prefer a wetter chili, add water to thin it out. Cover the pot, decrease heat to low, and let it simmer for one hour, stirring occasionally.

Once you are ready to eat, add toppings of your choice, serve and enjoy!

Ingredients
  

  • 2 lbs ground beef
  • 1/2 diced yellow onion
  • 2 cloves garlic, minced
  • 28 oz crushed tomatoes
  • 10 oz Rotel tomatoes with green chilies
  • 2 tbsp chili powder
  • 1/4 tsp cayenne pepper
  • 1 tsp ground cumin
  • 1 tsp ground oregano
  • 1 tsp salt
  • 1/4 cup corn meal
  • 15 oz kidney beans drained and rinsed
  • 15 oz black beans drained and rinsed

Toppings options

  • shredded cheese
  • sour cream
  • diced onions white or green onions
  • jalapeno slices
  • tortilla or corn chips
  • crushed crackers

Instructions
 

  • In large pot, cook and crumble ground beef over medium heat until browned.
  • Drain excess grease.
  • Add onion and garlic, cook for 1 minute.
  • Add seasoning to beef and mix in.
  • Add tomatoes and beans, stir to combine.
  • Decrease heat to low and cover.
  • Let simmer for 1 hour, stirring occasionally.
  • When ready to serve, add toppings and enjoy!

Notes

Add water if too dry or thick.
Masa Harina has been suggested instead of corn meal for a great flavor addition. If you have it on hand, I highly recommend it!
Cornstarch (mixed with equal parts water) or flour can also be substituted for cornmeal as a thickener.
